The grapes are harvested by hand at the end of October, by successive sorting. This cuvée is the assemblage of three sorting selections from three land plots of Chaume.
The alcoholic fermentation extends over 3 months in temperature-controlled vats (17 ° C) and is carried out without yeast. The wine is then aged on fine lees for 10 months.
This 1er Cru is adorned with a yellow-gold appearance with a gingerbread fragrance. On the palate, it develops a fruity aromatic, elegant and fine. We discover a subtle honey flavour, complex and full. Beautiful persistent aromas with a smooth finish.
A wine to be appreciated young but which will improve with age.
Serve at 8 ° C, for a better tasting, we advise you to decant it.
To be drunk as an aperitif with friends or for a relaxing evening, ideal for foie gras or blue cheese.
